Now the acclaimed restaurant is preparing to host one of Cape Town’s most anticipated culinary events of the year.
From 13 to 16 August 2026, Amura will welcome renowned French chef Alain Roux for an exclusive culinary residency, culminating in a spectacular Four Hands Dinner alongside Chef Ángel León. Together, the two chefs bring the expertise behind six MICHELIN Stars to a limited-edition dining experience that is expected to attract local food lovers and international travellers alike.
Two Culinary Masters, One Extraordinary Menu
The residency is the latest in a series of international collaborations spearheaded by Mount Nelson General Manager Patrick Fisher, further cementing Amura’s reputation as one of Cape Town’s most exciting fine dining destinations.
Chef Alain Roux will lead the kitchen for the first three evenings before joining Chef Ángel León for an exclusive Four Hands Dinner on the final night. The menu promises an inspired meeting of traditional French cuisine and contemporary Spanish gastronomy, celebrating craftsmanship, seasonality and exceptional ingredients.
Chef Ángel León Brings the Ocean to the Table
Known internationally as “The Chef of the Sea”, Chef Ángel León has transformed modern gastronomy through his innovative use of marine ingredients.
His award-winning restaurants, Aponiente and Alevante in Cádiz, Spain, have earned a combined five MICHELIN Stars, reflecting his pioneering work with sustainable seafood, plankton and underutilised marine species.
Amura marks his first restaurant outside Spain, where he continues to showcase his distinctive approach to cooking inspired by the ocean.
Alain Roux Continues a Legendary Culinary Legacy
Chef Alain Roux is one of Britain’s most respected chefs and the custodian of one of the world’s most celebrated culinary dynasties.
As Chef Patron of The Waterside Inn, founded by his father Michel Roux, he has maintained the restaurant’s three MICHELIN Stars for an extraordinary 41 consecutive years — one of the longest-running achievements in fine dining outside France.
Throughout his career, Roux has collaborated with some of the world’s leading chefs, including Heston Blumenthal and Clare Smyth.
